Lesser Known Meat Cuts & How to Cook Them

Facilitator:  Tanya Cauthen, Belmont Butchery

Opened in 2006, Belmont Butchery in Richmond, Virginia, was quick to become known for its modern approach to old fashioned butchery. May it be hot dogs or pâté en croute, Belmont Butchery features local, whole animal butchery along with restaurant quality meats, cheeses, wine, and sundries. In this workshop, founder & head butcher, Tanya Cauthen will lead a tutorial through most of the cuts of beef, pork, and lamb, as well as explain how to cook them! Her focus will be on lesser known cuts, such as Denver and Bavette. Facilities permitting, she will be cooking live as part of this program. 

Trained as a chef in Switzerland, Tanya has won Food Network’s “CHOPPED” in 2017, and has been featured in Bon Appetit, Saveur, and Food & Wine magazines.

Farm 9-1-1

Facilitator:  Katie Hammock, Trauma Nurse

Katie's workshops equip individuals with key tools regarding pre-hospital first aid, providing valuable tips and tricks to increase confidence in emergency situations. Through sharing real-life stories and firsthand experiences, Katie empowers individuals with the knowledge and preparedness necessary to navigate critical situations and minimize the impact of farm-related injuries.

Katie Hammock is an experienced Emergency Room nurse with six years of dedicated service at a Level 1 Trauma Center in southern Virginia. A resident of Museville, Virginia, Katie lives on a dairy farm with her husband and toddler son. Witnessing the devastating consequences of farm accidents firsthand, Katie is driven by a deep passion to merge her expertise in emergency medicine with her love for agriculture. 

Tick Management

Facilitator: Erin Small, Extension Agent   

The presentation will highlight the diseases ticks can transmit, such as Lyme disease, Rocky Mountain spotted fever, and Alpha Gal. It will also discuss prevention methods, including tick checks, proper clothing, and repellents, as well as the importance of early detection and treatment to reduce the risk of serious health issues associated with tick bites.

Erin Small is an Agriculture and Natural Resources Extension Agent in Prince Edward County. Born and raised in Fluvanna County, her farming experience is quite diverse. She is a former agriculture teacher and Virginia Tech graduate with special interests in agriculture education, beef cattle, freshwater fish, and floral design. She is a lifelong 4-H All Star and served as the Fluvanna FFA president. Erin has been actively involved with Farm Bureau since her senior year of high school where she served as a student representative on her county board and began the Young Farmers group in Fluvanna.

The Weakest Link in Cybersecurity: You

Facilitator:  Jason Welch, Farm Credit of the Virginias

In today's rapidly evolving digital landscape, cybersecurity threats are becoming increasingly sophisticated. This presentation explores the current threat landscape, emphasizing the critical role of the human factor in cybersecurity. We will explore the pervasive issue of social engineering, where attackers exploit human psychology to gain unauthorized access to sensitive information.  As we transition into an era dominated by Artificial Intelligence (AI), the presentation will also examine how AI is being leveraged by attackers to create more advanced and deceptive social engineering tactics.

Growing up on a small beef cattle farm, Jason developed a passion for farming and hard work from an early age. This strong work ethic has been a cornerstone of his professional journey. Currently, Jason resides in Roanoke County, Virginia, with his wife Kyndal, their daughter Emersyn, and their beloved dog, Ryleigh. In his free time, Jason enjoys mountain biking, playing the guitar, and exploring the world of computers.

Jason began his IT journey in 2001 and has accumulated almost 25 years of experience in the field. His expertise spans Network and Server Management, Customer Support, Printer Management, IT Infrastructure, and Cyber Risk Management. Since joining Farm Credit of the Virginias in 2018, Jason has focused on Cybersecurity, where he plays a crucial role in authoring annual IT training for the Board of Directors and employees. His dedication and extensive knowledge make him an invaluable asset to the organization.

 

County Program Planning: 5 Steps to Fabulous

Facilitator:  Tom Donnelly, American Farm Bureau Federation

Tom Donnelly serves as the Senior Director of Grassroots Program Development for the American Farm Bureau Federation. In this role, he oversees the organization's key advocates program, the GO Team, and collaborates with state Farm Bureaus and grassroots advocates nationwide, uniting their collective voice to engage legislators at all levels of government.

With more than three decades of expertise in advocacy, grassroots, and the digital public affairs sector, Tom boasts a wealth of experience. In 2001, he established Illumen, a pioneering startup specializing in digital news aggregation, legislative tracking, and advocacy platforms. Tom's background includes time spent at Seattle Pacific University, where he not only pursued his studies but also excelled as a soccer player, securing a Division II National championship. Presently residing in Arcola, VA, he shares his home with his wife, son, and the ever-loyal black Labrador, Reece.
